Cheese-Stuffed Roasted Vegetable Medley
Ingredients
- 1 bunch asparagus, trimmed
- 1 small head cauliflower, cut into florets
- 1 head broccoli, cut into florets
- 3 carrots, peeled and cut into 1-inch pieces
- 2 parsnips, peeled and cut into 1-inch pieces

- 1 teaspoon paprika
- 2 cups assorted cheeses, shredded (use your choice of Parmesan, Cheddar, Feta, Goat, Gruyère, Gouda, Swiss, or Blue cheese)
- 1/2 cup heavy cream
Instructions
1. Preheat the Oven: Preheat your oven to 425°F (220°C).
2. Prepare the Vegetables: On a large baking sheet, arrange the asparagus, cauliflower, broccoli, carrots, parsnips, rutabaga, turnips, sweet potatoes, and radishes evenly.
3. Season and Mix: Drizzle the olive oil and balsamic vinegar over the vegetables. Sprinkle generously with salt, dried thyme, and paprika. Toss all ingredients together until the vegetables are well-coated with the oil and seasoning.
4. Roast the Vegetables: Place the baking sheet in the preheated oven. Roast for 25-30 minutes, or until the vegetables are tender and slightly caramelized. Check for doneness by piercing with a fork.
5. Prepare the Cheese Mixture: While the vegetables roast, mix the shredded cheeses and heavy cream in a medium-sized bowl to create a creamy cheese blend.
6. Stuff with Cheese: Once the vegetables are done, remove the baking sheet from the oven. Lower the oven temperature to 375°F (190°C). With a spoon, create small wells in the vegetables and fill them with the cheese mixture.
7. Bake Until Cheese Melts: Return the baking sheet to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbling.
