Cheesy Bacon Potato Breakfast Skillet
Ingredients
- 3 large russet potatoes, peeled and diced
- 6 slices of bacon
- 1 1/2 cups shredded cheddar cheese
- 2 tablespoons chopped chives (or green onions)
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3 large eggs
- 2 tablespoons olive oil
Instructions
1. Preheat Oven:
Preheat your oven to 400°F (200°C) and prepare a large oven-safe skillet or cast-iron pan.
2. Cook Bacon:
In the skillet over medium heat, cook the bacon slices until crispy, approximately 8-10 minutes. Remove bacon from the skillet and place on a paper towel-lined plate to drain. Once slightly cool, crumble the bacon.
3. Prepare Potatoes:
Add the diced potatoes to the pan with the bacon grease. Season with salt and pepper. Cook over medium heat, stirring occasionally, until the potatoes are golden brown and tender, about 15 minutes.
4. Blend Ingredients:
Return the crumbled bacon to the skillet with the potatoes. Sprinkle the shredded cheddar cheese evenly over the potato mixture.
5. Create Wells for Eggs:
Use a spoon to create three small wells in the potato mixture. Carefully crack an egg into each well.
6. Bake:
Transfer the skillet to the preheated oven. Bake until the egg whites are set but yolks are still runny, approximately 10-12 minutes.
7. Finish & Serve:
Remove skillet from the oven. Garnish with chopped chives or green onions. Serve immediately for a warm and satisfying breakfast.
