Cheesy Beef Enchilada Bake
Ingredients
- 1 pound ground beef
- 1 can (10 oz) enchilada sauce
- 8 corn tortillas
- 2 cups three-cheese Mexican blend shredded cheese
- 1 cup sour cream
- 2 jalapeños, sliced
- 1 can (14.5 oz) diced tomatoes, drained
Instructions
1. Preheat the Oven: Preheat your oven to 375°F (190°C). This will ensure even cooking for the enchilada bake.
2. Cook the Ground Beef: In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 7-9 minutes. Drain any excess fat.
3. Add Enchilada Sauce: Pour half the can of enchilada sauce into the skillet with the cooked beef. Stir to combine and let it simmer for another 2-3 minutes. This allows the flavors to meld.
4. Prepare the Baking Dish: In a 9x13-inch baking dish, spread a thin layer of the remaining enchilada sauce to prevent the tortillas from sticking.
5. Assemble the Enchiladas: Layer 4 corn tortillas at the bottom of the dish, overlapping slightly if necessary. Spoon half of the beef mixture over the tortillas, spreading it evenly. Sprinkle 1 cup of shredded cheese over the beef.
6. Add Diced Tomatoes and Jalapeños: Distribute half of the diced tomatoes and a few slices of jalapeños on top. Add another layer of 4 corn tortillas.
7. Repeat Layers: Spread the remaining beef mixture over the tortillas, followed by the remaining diced tomatoes and jalapeños. Top with the last cup of cheese.
8. Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
9. Garnish and Serve: Allow the dish to cool slightly for about 5 minutes. Serve topped with dollops of sour cream and extra jalapeño slices for added heat.
