Cheesy Beef Enchilada Bake with Fresh Toppings



Ingredients



- 1 lb ground beef
- 1 can (10 oz) enchilada sauce
- 12 corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 2 jalapeños, sliced
- 1 cup diced tomatoes
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 1 can (10 oz) Rotel
- 1 cup salsa
- 1 cup pico de gallo
- 1 cup guacamole
- 1/2 cup green onions, sliced
- 1/4 cup cilantro, chopped
- 2 cups shredded lettuce

Instructions



1. Preheat Oven: Preheat your oven to 375°F (190°C).

2. Prepare Filling: In a large skillet over medium heat, cook ground beef until browned, about 6-8 minutes. Drain excess fat.

3. Add Ingredients: Add onion, red and green bell peppers, and cook until softened, about 5 minutes. Stir in diced tomatoes, Rotel, pinto beans, black beans, and salsa. Cook for an additional 3 minutes until well combined.

4. First Layer: Spread 1/3 cup of enchilada sauce on the bottom of a 9x13-inch baking dish.

5. Tortilla Layer: Place 4 corn tortillas over the sauce. Top with half of the beef-bean mixture, 1 cup of shredded cheese, and 1/3 of the jalapeños.

6. Second Layer: Add another layer of 4 tortillas, the remaining beef-bean mixture, 1 cup of shredded cheese, and another 1/3 of the jalapeños.

7. Finalize Layer: Top with the final layer of 4 tortillas. Pour remaining enchilada sauce over the top, and sprinkle with remaining cheese and jalapeños.

8. Bake: Cover with foil and bake in the preheated oven for 20 minutes. Remove foil and bake an additional 5 minutes until cheese is melted and bubbly.

9. Finish and Serve: Remove from oven and let cool slightly. Garnish with green onions, cilantro, and remaining jalapeños.

10. Add Fresh Toppings: Serve with sour cream, pico de gallo, guacamole, and a side of shredded lettuce.
