Cheesy Chicken and Broccoli Casserole Delight
Ingredients
- 4 chicken breasts, boneless and skinless
- 1 tablespoon Kosher salt
- 1 teaspoon Black pepper, freshly ground
- 4 tablespoons Unsalted butter
- 1 Sweet onion, finely chopped

- 1/2 cup Parmesan cheese, grated
- 2 cups Broccoli florets, blanched
- 2 tablespoons Parsley leaves, chopped
- 1 cup Buttery crackers, crushed
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Season the Chicken
Season the chicken breasts with 1/2 tablespoon of Kosher salt and freshly ground black pepper. Set aside.
3. Cook the Chicken
In a large oven-safe skillet, melt 2 tablespoons of unsalted butter over medium-high heat. Add the chicken breasts and cook for about 5 minutes per side until golden brown. Remove the chicken and set aside.
4. Sauté Aromatics
In the same skillet, add the remaining 2 tablespoons of butter. Add the chopped sweet onion and celery. Sauté for about 3-4 minutes until the onion is translucent. Stir in the minced garlic, cooking for an additional minute.
5. Create the Sauce Base
Sprinkle the all-purpose flour over the sautéed vegetables, stirring constantly until the mixture forms a paste. Gradually whisk in the dry white wine and chicken stock, ensuring there are no lumps. Bring to a simmer.
6. Thicken the Sauce
Add the heavy cream, Dijon mustard, remaining 1/2 tablespoon of Kosher salt, and a dash of black pepper. Continue to cook, stirring frequently, until the sauce has thickened (about 5 minutes).
7. Incorporate the Cheese
Lower the heat and stir in the sharp cheddar cheese and Parmesan cheese until smooth. Add the blanched broccoli florets to the sauce and mix well.
8. Assemble the Casserole
Nestle the seared chicken breasts into the creamy broccoli and cheese mixture in the skillet. Sprinkle the crushed buttery crackers evenly over the top.
9. Bake to Perfection
Transfer the skillet to the preheated oven and bake for 20-25 minutes until the casserole is bubbly and the cracker topping is golden brown.
10. Garnish and Serve
Remove the skillet from the oven. Let it cool slightly before sprinkling with fresh parsley leaves. Serve warm.
