1 cup Middlefield Original Cheese Co-Op Mild Cheddar Cheese, shredded
1 cup Middlefield Original Cheese Co-Op Swiss Cheese, grated
1 cup Middlefield Original Cheese Co-Op All Natural Pepper Jack, diced
1 cup Middlefield Original Cheese Co-Op Shredded Pepper Jack Cheese
1 cup Middlefield Original Cheese Co-Op Monterey Jack Cheese, shredded
1 cup Sunrise Creamery Dilly Pickle Jack Cheese, shredded
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/2 cup unsalted butter, melted
4 large eggs
1/4 cup whole milk

Instructions



1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

2. Prepare Dry Ingredients: In a large mixing bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of cayenne pepper. Mix well to ensure even distribution of the baking powder and spices.

3. Combine Cheeses: In a separate bowl, mix together the shredded and cubed cheeses: Gouda, Mozzarella/Provolone, Smoked Cheddar, Mild Cheddar, Swiss, All Natural Pepper Jack, Shredded Pepper Jack, Monterey Jack, and Dilly Pickle Jack. Ensure the cheeses are evenly combined.

4. Mix Wet Ingredients: In another bowl, whisk together 1/2 cup of melted unsalted butter, 4 large eggs, and 1/4 cup of whole milk until completely blended.

5. Form Dough: Gradually add the dry ingredients into the wet ingredients mixture, stirring consistently to form a dough. Once a dough consistency is achieved, fold in the cheese mixture until evenly distributed throughout the dough.

6. Shape the Puffs: Using your hands, shape the dough into small balls, about 1 inch in diameter. Place them onto the prepared baking sheets, ensuring they are spaced evenly.

7. Bake: Place the cheese puffs in the preheated oven and bake for 18-20 minutes, or until they are golden brown and slightly crisp on the outside.

8. Cool and Serve: Remove the baking sheets from the oven and allow the cheese puffs to cool slightly before serving. They are best served warm.
