Cheesy Green Chile Chicken Enchiladas



Ingredients



- 1 lb chicken breast, cooked and shredded
- 1 cup sour cream
- 1 can (7 oz) green chiles, chopped
- 1 medium onion, finely chopped
- 2 stalks celery, finely chopped
- 2 tablespoons butter
- 8 flour tortillas (8-inch)
- 2 cups Monterey Jack cheese, shredded
- Salt and pepper to taste

Instructions



1. Preheat the oven to 350°F (175°C).

2. Prepare the filling:
- In a large skillet over medium heat, melt the butter.
- Add the chopped onion and celery, then sauté for 5 minutes or until the onion is translucent and the celery is soft.
- Stir in the shredded chicken and chopped green chiles. Cook for another 3 minutes, allowing the flavors to meld together.
- Remove from heat and add the sour cream. Mix until the filling is well combined. Season with salt and pepper to taste.

3. Assemble the enchiladas:
- Warm the flour tortillas either in a microwave or on a skillet to make them pliable.
- Spoon approximately 1/3 cup of the chicken mixture onto each tortilla.
- Sprinkle each with a bit of Monterey Jack cheese.
- Roll the tortillas tightly around the filling and place them seam-side down in a 9x13-inch baking dish.

4. Top and bake:
- Once all tortillas are filled and arranged in the baking dish, cover evenly with remaining Monterey Jack cheese.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden brown.

5. Serve:
- Let the enchiladas cool slightly for a few minutes.
- Garnish with additional sour cream or chopped cilantro, if desired.
