Cheesy Ham & Broccoli Twice-Baked Potatoes
Ingredients
- 4 large russet potatoes
- 4 oz thinly sliced ham, diced
- 2 tbsp unsalted butter
- 1/2 cup chicken broth
- 1/4 cup half and half
- 1 cup shredded sharp cheddar cheese
- 1 tbsp Dijon mustard
- 1/4 cup panko breadcrumbs
- 1 cup broccoli florets, finely chopped
- 2 tbsp all-purpose flour
- 1/2 tsp garlic powder
- Salt and pepper, to taste
Instructions
1. Preheat the Oven:
Preheat your oven to 400°F (204°C).
2. Prepare the Potatoes:
Scrub the russet potatoes clean and pierce each several times with a fork. Place them directly on the oven rack and bake for PT1H (1 hour), until tender.
3. Steam the Broccoli:
While the potatoes are baking, steam the broccoli florets until just tender, about PT5M (5 minutes). Set aside.
4. Scoop and Mash the Potatoes:
Remove baked potatoes from the oven and let them cool slightly. Carefully cut each potato in half lengthwise and scoop out the flesh into a large bowl, leaving a 1/4-inch thick shell. Place potato shells on a baking sheet.
5. Prepare the Filling:
In the large bowl with the potato flesh, add butter, chicken broth, half and half, and garlic powder. Mash until smooth and creamy.
6. Add Mix-Ins:
Stir in the ham, steamed broccoli, half of the shredded cheddar cheese, flour, Dijon mustard, and a pinch of salt and pepper. Mix until well combined.
7. Stuff the Potato Shells:
Spoon the potato mixture back into the potato shells, mounding slightly.
8. Top and Bake:
Sprinkle the remaining cheddar cheese and panko breadcrumbs evenly over the potato halves.
9. Final Bake:
Return to the oven and bake for PT20M (20 minutes), until tops are golden and crispy.
10. Serve:
