Cheesy Jalapeno Corn Fritters
Ingredients
- 1 cup corn kernels (fresh or canned, drained)
- 1 cup Monterey Jack cheese, shredded
- 2 jalapenos, finely chopped (remove seeds for less heat)
- 1/2 cup all-purpose flour
- 1/2 cup cornmeal
- 1 egg, beaten

- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt

Instructions
1. Prepare the Ingredients:
- In a large mixing bowl, combine the corn kernels, shredded Monterey Jack cheese, and chopped jalapenos. Stir in the finely chopped onion.
2. Mix the Dry Ingredients:
- In a separate bowl, whisk together the all-purpose flour, cornmeal, smoked paprika, and salt.
3. Combine Wet and Dry Ingredients:
