Cheesy Oven-Baked Pepperoni and Veggie Casserole
Ingredients
- 1 cup sliced pepperoni
- 2 medium green peppers, sliced
- 2 medium red peppers, sliced
- 1 cup black olives, sliced
- 1 large onion, thinly sliced
- 2 cups shredded Cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 1 cup marinara sauce
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and pepper to taste
Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Vegetables and Pepperoni:
In a large bowl, combine the sliced green peppers, red peppers, black olives, and onions. Drizzle with olive oil, and season with oregano, salt, and optional crushed red pepper flakes. Toss until well coated.
3. Layer the Casserole:
In a baking dish (9x13-inch recommended), spread an even layer of marinara sauce at the bottom. Layer half of the sliced pepperoni over the sauce. Add half of the vegetable mixture on top, followed by half of the Cheddar and Monterey Jack cheese blends.
4. Repeat Layers:
Add another layer using the remaining pepperoni, followed by the rest of the vegetable mixture. Top with the remaining Cheddar and Monterey Jack cheeses.
5. Bake the Casserole:
Place the assembled casserole in the preheated oven. Bake uncovered for approximately 30 minutes or until the cheese is golden-brown and bubbly.
6. Cooling and Serving:
Allow the casserole to cool for about 5 minutes before serving. This helps the layers to set and makes it easier to slice.
