Cheesy Spicy Avocado Quesadilla Delight
Ingredients
- 4 large flour tortillas
- 1 cup shredded Cheddar cheese
- 1 cup shredded Mozzarella cheese
- 2 tablespoons gochujang
- 2 tablespoons vegetable oil
- 2 ripe avocados, peeled and pitted
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
Instructions
1. Prepare the Avocado Mixture
Begin by mashing the peeled and pitted avocados in a bowl until smooth. Season with a pinch of salt and some of the freshly chopped cilantro, leaving some for garnishing. Set aside.
2. Assemble the Quesadillas
Lay out the flour tortillas on a clean surface. Spread half a tablespoon of gochujang evenly over one side of each tortilla. In a bowl, combine Cheddar and Mozzarella cheese. Evenly distribute the cheese mixture and mashed avocado over half of each tortilla. Fold the tortillas in half to cover the filling.
3. Cook the Quesadillas
Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Once hot, add two of the folded tortillas. Cook for about 3-4 minutes on each side, or until the tortillas are golden brown and the cheese has melted completely. Remove from the skillet and repeat with the remaining tortillas, adding more oil if needed.
4. Final Touches & Serve
Slice each quesadilla into three wedges. Plate them and serve immediately with a dollop of sour cream on each slice. Sprinkle the remaining chopped cilantro over the top for garnish.
