Cheesy Three-Bean Fiesta Chili
Ingredients
- 1 can (15 oz) no-bean chili
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 can (11 oz) fiesta-style corn, drained
- 1 can (10 oz) tomatoes and green chilies
- 1 lb Velveeta cheese, cubed
- Tortilla chips (optional, for serving)
- Green onions (optional, for garnish)
Instructions
1. Preparation:
Begin by gathering and draining the canned ingredients as needed. Cube the Velveeta cheese and set aside. Chop the green onions if you plan to use them for garnish.
2. Simmer the Base:
In a large pot over medium heat, pour in the entire can of no-bean chili. Stir in the diced tomatoes, fiesta-style corn, and tomatoes with green chilies. Allow this mixture to come to a gentle simmer, stirring occasionally for about 5 minutes.
3. Add the Beans:
Stir in the drained pinto beans, black beans, and kidney beans into the pot. Continue to simmer the mixture for another 10 minutes, stirring occasionally to ensure even heating.
4. Incorporate the Cheese:
Gradually add the Velveeta cheese cubes to the pot, stirring continuously until the cheese is completely melted and the chili achieves a smooth, creamy texture. This should take about 5–7 minutes.
5. Final Simmer:
Reduce the heat to low and let the chili sit for an additional 5 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.
6. Serve:
Ladle the chili into bowls and garnish with chopped green onions if desired. Serve with tortilla chips on the side for added crunch.
