Cheesy Tortellini with Garlic Spinach & Roasted Bell Pepper Sauce



Ingredients



- 16 oz O'Sole Mio 4-Cheese Tortellini
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 cups cherry tomatoes, halved
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 1 cup roasted bell peppers, sliced
- 1 cup tomato sauce
- 1/2 cup fresh basil pesto
- 1/2 cup cream sauce
- 2 tbsp butter
- 1/2 cup Parmesan cheese, grated
- 1/4 cup ricotta cheese
- 2 tbsp Grana Padano DOP cheese, grated
- 2 tbsp Romano cheese, grated
- 2 tbsp Asiago cheese, grated
- 2 tbsp imported hard-ripened cheese, grated
- Salt, to taste

Instructions



1. Prepare Ingredients:
Begin by preparing all the ingredients. Halve the cherry tomatoes, mince the garlic, slice the mushrooms and roasted bell peppers, and wash the spinach thoroughly.

2. Cook Tortellini:
In a large pot, bring salted water to a boil. Add the tortellini and cook for 4-5 minutes until they float to the top. Drain and set aside.

3. Sauté Garlic & Vegetables:
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Add sliced mushrooms, sauté for another 3-4 minutes until they begin to soften.

4. Add Tomatoes & Peppers:
Increase the heat to medium-high and add cherry tomatoes and roasted bell peppers to the skillet. Cook for 3-4 minutes until tomatoes are slightly blistered.

5. Incorporate Spinach:
Add spinach to the skillet, cooking until wilted, about 2 minutes.

6. Prepare Sauce Base:
Lower the heat to medium, and stir in the tomato sauce, basil pesto, and cream sauce. Cook for 3-4 minutes, allowing flavors to meld together.

7. Combine with Tortellini:
Add cooked tortellini to the skillet. Stir gently until the tortellini is well-coated with the sauce.

8. Finish with Cheese:
Stir in butter and grated Parmesan, Grana Padano, Romano, Asiago, and imported hard-ripened cheese. Mix until the cheeses are fully melted and incorporated.

9. Serve:
Serve tortellini hot, garnished with a dollop of ricotta cheese and additional grated Parmesan if desired.
