Cheesy Zucchini and Ham Filo Tart with Fresh Herbs
Ingredients
For the Filling:
- 2 medium zucchinis, grated
- 1 cup shredded cheddar cheese
- 1/2 cup diced cheddar cheese
- 1/2 cup diced ham
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 2 medium carrots, grated
- 1/4 cup chopped parsley
- 3 large eggs
- Salt and pepper, to taste

Instructions
1. Preparation:
- Preheat the oven to 375°F (190°C).
- Prepare a 9-inch tart pan with a removable bottom.
- Grate the zucchinis and carrots, then squeeze out excess moisture using a clean kitchen towel. This will help avoid a soggy filling.
2. Filling:
- In a large bowl, combine grated zucchinis, cheddar cheese, diced ham, chopped onion, minced garlic, grated carrots, chopped parsley, and a pinch of salt and pepper. Stir in the three beaten eggs until fully incorporated.
3. Filo Tart Assembly:
- Carefully layer the filo sheets in the tart pan, brushing each with melted butter to prevent them from drying out and to add flavor.
- Lay each sheet slightly rotated from the last to ensure even coverage and a rustic look. Allow the excess to hang over the edges.
4. Fill and Bake:
- Pour the zucchini and ham filling into the prepared filo crust. Spread evenly and lightly press down to compact.
- Fold the overhanging filo edges over the filling, creating a border.
- Brush the top with additional melted butter for golden, flaky perfection.
- Bake in the preheated oven for 35 to 40 minutes, or until the filo is golden brown and the filling is set.
5. Cool and Serve:
- Allow the tart to cool in the pan for about 10 minutes.
- Carefully remove from the tart pan and slice into wedges.
- Serve warm or at room temperature, garnished with extra parsley if desired.
