Cheesy Zucchini & Roasted Red Pepper Casserole Delight
Ingredients
- 2 medium zucchinis, sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1 cup roasted red pepper, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup fresh basil leaves, roughly chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Zucchini:
In a large mixing bowl, toss the zucchini slices with olive oil, salt, and black pepper until well coated.
3. Layer the Ingredients:
In a 9x13-inch baking dish, create a single layer of zucchini slices at the bottom. Spread half of the chopped roasted red pepper over the zucchini. Dot half of the ricotta cheese on top, then sprinkle with half of the Parmesan cheese. Repeat these layers, then finish with the shredded mozzarella on top.
4. Bake the Casserole:
Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is bubbly and golden brown.
5. Garnish and Serve:
Once baked, remove the casserole from the oven and let it cool for 5 minutes. Garnish with fresh basil leaves before slicing and serving.
