Cherry Cola Fudge Cake with Vanilla Marshmallow Frosting

Ingredients

Cake Base:
- 1 box Devil's Food Cake Mix (approximately 15.25 oz)
- 1 cup cherry cola
- 1/2 cup unsalted butter, melted
- 1/3 cup maraschino cherry juice

Frosting:
- 1 container whipped vanilla frosting (16 oz)
- 1 cup marshmallow creme
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1/4 tsp salt

Garnish:
- 16 stemmed maraschino cherries

Instructions

Step 1: Prepare the Cake Batter
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large mixing bowl, combine the Devil's Food Cake Mix, cherry cola, melted butter, and maraschino cherry juice. Mix until the batter is smooth and well combined, approximately 2 minutes on medium speed.
3. Evenly distribute the batter between the prepared pans, smoothing the tops with a spatula.

Step 2: Bake the Cake
1. Place the pans in the preheated oven and bake until a toothpick inserted into the center comes out clean, about 30 to 35 minutes.
2. Once baked, allow the cakes to cool in the pans for 10 minutes. Then, remove them from the pans and transfer to a wire rack to cool completely.

Step 3: Prepare the Frosting
1. In a large bowl, beat together the whipped vanilla frosting, marshmallow creme, and softened butter until fluffy.
2. Gradually add powdered sugar, vanilla extract, and salt, beating on low until fully incorporated, then increase to high for a creamy consistency.

Step 4: Assemble the Cake
1. Place one cake layer on a serving plate. Spread a generous amount of frosting over the top.
2. Place the second layer on top, and then frost the top and sides of the entire cake evenly with remaining frosting.

Step 5: Garnish and Serve
1. Carefully place stemmed maraschino cherries evenly around the top edge of the cake for a decorative finish.
2. Slice and serve. Store any leftovers in the refrigerator.
