Chickpea and Spinach Coconut Curry



Ingredients



- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/2 teaspoon ground cayenne pepper
- 1 teaspoon ground turmeric
- 1 cup tomato sauce
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 cup coconut milk
- 1 teaspoon kosher salt
- 4 cups baby spinach

Instructions



1. Heat the Oil
In a large skillet or pot, heat the vegetable oil over medium heat until shimmering, approximately 2 minutes.

2. Sauté Aromatics
Add the minced garlic and ginger to the hot oil, stirring continuously. Cook for about 1 minute until they are fragrant and lightly golden.

3. Spice It Up
Sprinkle in the ground cayenne pepper and ground turmeric. Stir continuously for 30 seconds to allow the spices to bloom, releasing their flavors.

4. Add Tomato and Chickpeas
Pour in the tomato sauce, stirring to combine with the spices and aromatics. Let it simmer for 3 minutes. Add the drained chickpeas, stirring to coat them evenly with the tomato mixture.

5. Simmer the Curry
Lower the heat to medium-low and pour in the coconut milk. Season with kosher salt, stirring thoroughly. Allow the curry to simmer gently for 15 minutes, stirring occasionally to prevent sticking.

6. Incorporate Spinach
Add the baby spinach to the pot. Stir continuously for 2-3 minutes until the spinach is wilted and well mixed into the curry.

7. Final Taste Check
Taste and adjust the seasoning if necessary, adding more salt if desired.

8. Serve Hot
Once everything is well incorporated and the flavors are harmonized, remove from heat and serve hot. Pair it with rice or your favorite flatbread.
