Chocolate Chip Cookie Dough Ice Cream Sandwich Delight

Ingredients

- 1 pint vanilla ice cream
- 16 ounces chocolate chip cookie dough
- 1/4 cup mini chocolate chips
- 2 tablespoons butter
- 1/4 cup packed brown sugar

Instructions

1. Soften Butter and Cookie Dough:
Remove the cookie dough from packaging and place in a microwave-safe bowl. Add 2 tablespoons of butter. Microwave on high for 15-20 seconds until the butter is melted. Stir to combine the butter with the dough.

2. Preheat the Microwave Safe Dish:
Line a microwave-safe dish with parchment paper. Spread half of the softened cookie dough evenly across the bottom of the dish to form a flat, even layer resembling a cookie base.

3. Cook the Base Layer:
Microwave on high for approximately 60-90 seconds or until the dough begins to puff up and the edges appear set. Timing may vary based on your microwave’s wattage.

4. Cool the Base Layer:
Allow the base cookie layer to cool in the refrigerator for about 5 minutes to firm up slightly.

5. Assemble the Ice Cream Layer:
Take the vanilla ice cream out of the freezer and gently spread it over the cooled cookie base, smoothing it into an even layer.

6. Create the Top Cookie Layer:
Mix the remaining half of the cookie dough with 1/4 cup mini chocolate chips. Spread it over the ice cream layer as evenly as possible to form the top layer.

7. Final Set:
Return the assembled dish to the freezer and allow it to set for at least 1 hour, or until the cookie dough is firm and the ice cream is well set.

8. Slice and Serve:
Once set, remove from the freezer, lift the dessert from the dish using parchment paper edges, and slice into bars or squares. Serve immediately.
