Chocolate Chip Vanilla Pancakes
Ingredients
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions
1. Prepare the Dry Ingredients:
In a large mixing bowl, whisk together 1 cup of all-purpose flour, 2 teaspoons of baking powder, 2 tablespoons of sugar, and 1/4 teaspoon of salt. Make sure there are no lumps for an even batter.
2. Combine the Wet Ingredients:
In a separate bowl, beat 1 large egg, then add 1 cup of milk, 2 tablespoons of melted butter, and 1 teaspoon of vanilla extract. Whisk together until smoothly combined.
3. Mix the Batter:
Slowly pour the wet ingredients into the dry ingredients, stirring gently to blend. Be careful not to overmix; some small lumps are fine as they will ensure fluffy pancakes.
4. Fold in Chocolate Chips:
Gently fold 1/2 cup of chocolate chips into the batter, dispersing them evenly without overmixing.
5. Heat the Griddle:
Preheat a non-stick griddle or skillet over medium heat. To test if it's ready, sprinkle a few drops of water on the surface. If the water sizzles and evaporates quickly, you are ready to cook.
6. Cook the Pancakes:
Lightly grease the pan with a small amount of butter. Pour about 1/4 cup of batter per pancake onto the griddle. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes. Flip and cook the other side for another 2-3 minutes until golden brown.
7. Serve Warm:
