Chocolate Pistachio Delight Cake



Ingredients



- For the Cake:
- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoons baking soda
- 1 ½ teaspoons baking powder
- 2 cups granulated sugar
- 1 cup buttermilk
- 2 large eggs
- ½ cup vegetable oil
- 2 teaspoons vanilla extract

- For the Frosting:
- 2 cups heavy cream
- ½ cup butter, softened
- 8 ounces cream cheese, softened
- 1 cup sweetened condensed milk
- 1 cup pistachio nuts, chopped

Instructions



1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).

2. Prepare Cake Pans:
- Grease and flour two 9-inch round cake pans. Set aside.

3. Mix Dry Ingredients:
- In a large mixing bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking soda, and baking powder.

4. Combine Wet Ingredients:
- In another bowl, whisk together the granulated sugar, buttermilk, eggs, vegetable oil, and vanilla extract until smooth.

5. Create the Batter:
- Gradually add the dry ingredients to the wet ingredients, mixing gently until the batter is smooth and free of lumps.

6. Bake the Cake:
- Divide the batter evenly between the prepared cake pans.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

7. Cool the Cakes:
- Let the cakes cool in the pans for 10 minutes, then remove from pans and place on a wire rack to cool completely.

8. Prepare the Frosting:
- In a large bowl, beat the heavy cream until soft peaks form.
- In another bowl, beat the softened butter and cream cheese until fluffy.
- Gradually add the sweetened condensed milk to the cheese mixture, beating until smooth.
- Gently fold the whipped cream into the cream cheese mixture until well combined.

9. Frost the Cake:
- Place one cake layer on a serving platter. Spread a generous amount of frosting on top.
- Place the second cake layer over the frosting. Cover the top and sides of the cake with the remaining frosting.

10. Garnish with Pistachios:
- Sprinkle the chopped pistachio nuts over the top and sides of the cake.
