Chocolate Zucchini Dream Cake with Ganache Glaze
Ingredients
For the Cake:
- 1 cup oil
- 1 cup sour cream
- 1 cup white sugar
- 1 cup brown sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 3/4 cup dark cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 2 cups shredded zucchini (about 2 medium zucchinis)
- 1 cup semi-sweet chocolate chips
For the Ganache:
- 1 cup heavy cream
- 1 1/2 cups mini chocolate chips
Instructions
1. Preheat Oven:
Preheat your oven to 350°F (175°C).
2. Prepare Cake Pans:
Grease and flour two 9-inch round cake pans, then line the bottoms with parchment paper.
3. Mix Wet Ingredients:
In a large mixing bowl, combine the oil, sour cream, white sugar, and brown sugar. Beat until well blended. Add the eggs and vanilla extract, and continue mixing until the mixture is creamy and smooth.
4. Combine Dry Ingredients:
In a separate bowl, whisk together the all-purpose flour, dark cocoa powder, baking powder, baking soda, and salt until evenly mixed.
5. Combine with Buttermilk:
Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
6. Incorporate Zucchini and Chocolate Chips:
Fold in the shredded zucchini and semi-sweet chocolate chips using a spatula. Ensure the zucchini and chocolate chips are evenly distributed throughout the batter.
7. Bake the Cakes:
Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted into the center of the cakes comes out clean.
8. Cool the Cakes:
Allow the cakes to cool in their pans for 10 minutes before transferring them to wire racks to cool completely.
9. Prepare the Ganache:
In a small saucepan over medium heat, bring the heavy cream to a simmer. Remove from heat and pour over the mini chocolate chips in a heatproof bowl. Let sit for 2 minutes, then whisk until smooth and glossy.
10. Assemble the Cake:
Once the cakes are fully cooled, place the first cake layer on a serving plate. Spread a thin layer of ganache over the top, then place the second cake layer on top. Pour the remaining ganache over the top of the cake, allowing it to drip down the sides for a glossy finish.
