Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs total)
- 1/4 cup lemon juice
- 3 tablespoons olive oil, divided
- 1 tablespoon lemon pepper seasoning
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt to taste
Instructions
1. Marinate the Chicken:
In a medium bowl, combine the lemon juice, 2 tablespoons of olive oil, lemon pepper seasoning, dried basil, and dried oregano. Stir well to blend the flavors. Submerge the chicken breasts in the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, allowing the flavors to infuse into the chicken.
2. Preheat the Pan:
After marinating, heat the remaining 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat.
3. Cook the Chicken:
Once the pan is hot, remove the chicken breasts from the marinade (discard the marinade) and place them in the skillet. Cook the chicken for about 6-7 minutes on one side.
4. Flip and Finish:
Flip the chicken breasts and reduce the heat to medium. Continue to cook for another 6-7 minutes or until the internal temperature reaches 165°F (74°C), and the chicken is golden brown and fully cooked through.
5. Rest and Serve:
Remove the chicken from the skillet and let it rest for 5 minutes. This helps the juices redistribute, ensuring moist and tender meat. Slice and serve the chicken breasts warm, garnished with a sprinkle of additional lemon pepper seasoning if desired.
