Citrus-Lime Tequila Granita for a Refreshing Snack
Ingredients
1. 6 ice cubes
2. 1 cup Blanco tequila
3. 1 cup fresh lime juice
4. 1/2 cup water
5. 1/2 cup triple sec
6. 1/2 cup superfine sugar
7. 1 tablespoon kosher salt (for rimming)
Instructions
1. Prepare Simple Syrup:
- In a medium saucepan, combine 1/2 cup of water with 1/2 cup of superfine sugar.
- Place the saucepan on the stove over medium heat. Stir continuously until the sugar fully dissolves into the water, creating a simple syrup.
- Remove from heat and let it cool to room temperature. (PT10M - 10 minutes)
2. Mix the Granita Base:
- In a large mixing bowl, pour 1 cup of fresh lime juice, 1 cup of Blanco tequila, and 1/2 cup of triple sec.
- Gradually add the cooled simple syrup to the mixture while stirring to ensure all ingredients are well combined.
- Set aside. (PT5M - 5 minutes)
3. Create Ice Crystals:
- Crush the 6 ice cubes in a blender until the ice reaches a fine consistency resembling snow.
- Add the crushed ice to the lime and tequila mixture and stir gently. (PT5M - 5 minutes)
4. Freeze the Mixture:
- Pour the mixture into a shallow baking dish, ensuring it’s spread evenly.
- Place the dish flat in the freezer.
- After 30 minutes, use a fork to scrape the mixture, creating a fluffy ice texture. Repeat scraping every 30 minutes for 2 hours until full granita formation. (PT2H - 2 hours)
5. Serve:
- Before serving, rim the edges of glasses with kosher salt by dipping them first in water and then in salt.
- Spoon the granita into the prepared glasses and serve immediately for a revitalizing treat. (PT5M - 5 minutes)
