Citrus Olive Oil Cake with a Cinnamon Twist
Ingredients
- Nonstick cooking spray
- 1 cup granulated sugar
- 3 large eggs
- 1 tablespoon lemon zest
- 1 tablespoon orange zest
- 1/2 teaspoon kosher salt
- 3/4 cup extra-virgin olive oil
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
Instructions
1. Preheat the Oven:
Set your oven to 350°F (175°C). Lightly coat a 9-inch round cake pan with nonstick cooking spray. Ensure the entire inside is covered to prevent sticking, then set it aside.
2. Mix Sugar and Zests:
In a large mixing bowl, combine the granulated sugar, lemon zest, and orange zest. Using your fingertips, rub them together until the sugar becomes fragrant and moist, about 1 minute.
3. Add Eggs and Salt:
Crack the eggs into the sugar and zest mixture. Add the kosher salt. Whisk vigorously until the mixture is pale and slightly thickened, about 2 minutes.
4. Incorporate the Olive Oil, Milk, and Vanilla:
Gradually whisk in the extra-virgin olive oil, ensuring it is fully incorporated. Pour in the whole milk and add the vanilla extract. Continue whisking until the mixture is smooth, about 1 minute.
5. Combine Dry Ingredients:
In a separate bowl, sift together the all-purpose flour, baking powder, and ground cinnamon. Once combined, slowly fold the dry ingredients into the wet mixture using a spatula, mixing until no dry streaks remain. Be careful not to overmix.
6. Fill the Cake Pan:
Pour the batter into the prepared cake pan, using a spatula to even out the surface.
7. Bake the Cake:
Place the pan in the center of the preheated oven. Bake for 40–45 minutes, or until a toothpick inserted into the center of the cake comes out clean. The top should be a light golden brown.
8. Cool and Serve:
Allow the cake to cool in the pan on a wire rack for 10 minutes. Run a knife around the edge to loosen it and carefully turn the cake out onto the rack to cool completely before slicing and serving.
