Ingredients

Instructions
1. Prep the Citrus Zest:
- Wash the lemon, lime, and orange thoroughly. Using a microplane grater, zest each fruit completely, ensuring you avoid the bitter white pith. Collect the zest and set aside.
2. Juice the Citrus Fruits:
- Halve the zested fruits and squeeze out the juice from each. Filter the juice through a strainer to remove seeds and pulp. You should end up with about 1 cup of mixed citrus juice.
3. Create the Citrus Syrup:
- In a medium saucepan over medium-high heat, combine the citrus juice, 1/4 cup granulated sugar, and 1/2 cup water. Stir until sugar dissolves completely.
- Bring the mixture to a gentle simmer and reduce to a low heat, cooking for about 5 minutes until it slightly thickens into a syrup. Remove from heat.
4. Prepare the Batter:
- In a large mixing bowl, combine 1 cup all-purpose flour, the reserved citrus zest, and 1/2 teaspoon salt.
- Gradually stir in the melted butter and vanilla extract until a thick dough forms.
5. Cook the Snack Bites:
- Pour the citrus syrup into a large, shallow pan over low heat.
- Roll the dough into small bite-sized balls, about 1 inch in diameter.
- Add the dough balls into the syrup bath gently, ensuring they are evenly coated.
- Cover the pan with a lid and cook for about 10 minutes, occasionally rolling the bites to ensure even cooking and syrup absorption.
