Classic Apple Pie with a Buttery Crust



Ingredients



For the Crust:

- 2 1/2 cups all-purpose flour
- 1 cup (2 sticks) unsalted butter, chilled and cubed
- 1/2 cup shortening, chilled
- 1/4 cup ice-cold water

For the Filling:

- 6 Granny Smith apples, peeled, cored, and thinly sliced
- 1/2 cup apple juice
- 1 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg

Instructions



Step 1: Prepare the Pie Crust

1. In a large mixing bowl, combine 2 1/2 cups of flour with the butter and shortening. Use a pastry cutter to mix until the mixture resembles coarse crumbs.
2. Gradually add the ice-cold water, one tablespoon at a time, mixing gently until the dough holds together. Be careful not to overwork the dough.
3. Divide the dough into two equal parts, shape each into a disk, wrap in plastic, and refrigerate for at least 1 hour.

Step 2: Prepare the Apple Filling

4. In a large bowl, combine the sliced Granny Smith apples with apple juice. Toss to coat the apples well.
5. In a separate bowl, mix the sugar, cinnamon, and nutmeg. Sprinkle this mixture over the apples and toss again to ensure even coating.

Step 3: Assemble the Pie

6. Preheat your oven to 425°F (220°C).
7. On a lightly floured surface, roll out one dough disk into a 12-inch circle and place it into a 9-inch pie pan.
8. Pour the apple filling into the dough-lined pan, spreading evenly.
9. Roll out the second dough disk. Place it over the filling and trim the edges to leave a 1-inch overhang. Tuck the overhang under the bottom crust edge to seal, and crimp decoratively.

Step 4: Baking the Pie

10. Cut slits in the top crust to allow steam to escape.
11. Place the pie on a baking sheet to catch any juices that might bubble over.
12. Bake in the preheated oven for 15 minutes. Then reduce the oven temperature to 350°F (175°C) and continue baking for another 35 to 40 minutes, until the crust is golden brown and the filling is bubbling.
13. Let the pie cool on a wire rack for approximately 2 hours before serving.
