Classic Baked Chocolate Lava Cakes
Ingredients
- 1/2 cup unsalted butter
- 4 oz bittersweet chocolate (60-70% cacao), chopped
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- Powdered sugar for dusting
Instructions
1. Prepare the Oven and Ramekins:
Preheat your oven to 425°F (220°C). Grease four 6 oz ramekins with butter, ensuring all interior surfaces are coated to prevent sticking.
2. Melt Butter and Chocolate:
In a small saucepan over low heat, melt the unsalted butter and chopped chocolate together. Stir constantly until smooth. Remove from heat and let cool slightly.
3. Mix the Egg Base:
In a mixing bowl, whisk together 2 large eggs, 2 large egg yolks, and 1/4 cup granulated sugar until the mixture is thick and pale, about 2 minutes. This can be done by hand or with an electric mixer.
4. Combine Ingredients:
Gradually add the melted chocolate to the egg mixture, stirring continuously to incorporate. Add 2 teaspoons of vanilla extract and stir until all elements are well combined.
5. Incorporate Dry Ingredients:
Gently fold in 1/4 cup all-purpose flour and 1/4 teaspoon salt until the mixture is smooth and all the flour is incorporated. Be careful not to overmix.
6. Fill the Ramekins:
Divide the batter equally among the prepared ramekins, filling each about three-quarters full.
7. Bake the Lava Cakes:
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be firm, but the center will remain soft.
8. Serve:
Allow the cakes to rest for 1 minute before running a knife around the edges to loosen them. Invert the cakes onto individual plates. Dust with powdered sugar and serve immediately for a gooey center.
