Classic Breakfast Frittata with Spinach, Tomato, and Feta
Ingredients
- 6 large eggs
- 1/4 cup whole milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup onion, finely chopped
- 1 cup fresh baby spinach, roughly chopped
- 1/2 cup cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions
1. Preheat and Prepare
Preheat your oven to 375°F (190°C). Position an oven rack in the middle position.
2. Mix Eggs and Seasonings
In a medium-sized bowl, whisk together the eggs, 1/4 cup whole milk, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until well combined. Set aside.
3. Sauté Vegetables
In an oven-safe, non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and sauté for about 3 minutes until they begin to soften.
4. Add Spinach and Tomatoes
Stir in the chopped spinach and cook for another 2 minutes until wilted. Add the halved cherry tomatoes and sauté for 1 minute.
5. Combine Ingredients
Evenly spread the sautéed vegetables across the bottom of the skillet. Pour the egg mixture over the vegetables, tilting the skillet if necessary to ensure the eggs cover all vegetables.
6. Add Feta Cheese
Sprinkle the crumbled feta cheese evenly over the top of the egg-vegetable mixture.
7. Cook and Finish in the Oven
Allow the frittata to cook on the stove over medium-low heat for about 3-4 minutes until the edges start to set. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the eggs are completely set and the top is lightly golden.
8. Serve and Garnish
Carefully remove the frittata from the oven using oven mitts (handle will be hot). Let it rest for 5 minutes before slicing. Garnish with chopped fresh parsley if desired and serve warm.
