Classic Butter Shortbread Cookies
Ingredients
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
1. Preheat the Oven:
- Preheat your oven to 325°F (163°C).
2. Prepare the Dough:
- In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy, using an electric mixer on medium speed.
- Add the vanilla extract and mix until well combined.
- Gradually add the flour and salt, mixing on low speed until the dough comes together and forms a smooth, soft dough.
3. Shape the Cookies:
- Divide the dough in half and roll each half into a log about 2 inches in diameter. Wrap each log tightly with plastic wrap and refrigerate for at least 30 minutes to firm up.
4. Slice and Bake:
- Remove the dough from the fridge and slice into 1/4-inch thick rounds.
- Place the slices on ungreased baking sheets, leaving about 1 inch space between each cookie. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
5. Cool and Enjoy:
