Classic Caesar Salad with a Gourmet Twist
Ingredients
- 1 large head Romaine lettuce, torn into bite-sized pieces
- 1 cup croutons
- 1/2 cup Parmesan cheese, freshly grated
- 2 cloves garlic, finely minced
- 1 teaspoon anchovy paste
- 2 egg yolks, room temperature
- 2 tablespoons fresh lemon juice
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1/2 cup olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Lemon wedge, for garnish
Instructions
1. Prepare the Base:
- Place the torn Romaine lettuce in a large salad bowl and set aside.
2. Create the Dressing:
- In a medium-sized mixing bowl, combine minced garlic and anchovy paste. Stir well to form a smooth paste.
- Add egg yolks, lemon juice, Worcestershire sauce, and Dijon mustard to the garlic-anchovy mixture. Whisk until the mixture is well combined and smooth.
3. Emulsify the Dressing:
- Gradually add olive oil to the dressing mixture while whisking continuously. This should be done slowly to create a thick and creamy emulsion.
- Season the dressing with salt and black pepper. Adjust seasoning to taste.
4. Toss the Salad:
- Pour the dressing over the Romaine lettuce. Gently toss until all pieces are evenly coated.
5. Add Crunch and Cheese:
- Add croutons and most of the Parmesan cheese to the salad. Toss gently to distribute.
6. Plate and Garnish:
- Divide the salad evenly among serving plates.
- Top each serving with a sprinkle of the remaining Parmesan cheese and a wedge of lemon for garnish.
7. Serve:
- Serve immediately to enjoy the full freshness and crispness of the salad.
