Classic Chicken and Bay Leaf Stew
Ingredients
- 1 whole chicken (about 4 pounds), cut into pieces
- 2 medium onions, finely chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 2 teaspoons salt
- 1 teaspoon ground cumin
- 1/2 teaspoon freshly ground black pepper
- 4 cups water
- 2 cups chicken broth
Instructions
1. Prepare the Ingredients: Start by chopping the onions and mincing the garlic. Set them aside.
2. Sauté Aromatics: In a large pot over medium heat, add chicken pieces skin-side down. Allow the skin to render and become golden brown, approximately PT10M 10 minutes. Remove the chicken and set aside. Use the rendered fat to sauté onions and garlic until translucent and fragrant, about PT5M 5 minutes.
3. Season and Simmer: Return the chicken to the pot. Add bay leaves, salt, cumin, and black pepper. Gently stir to coat the chicken with the spices.
4. Add Liquids: Pour in water and chicken broth. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low. Cover the pot and allow it to simmer gently for PT1H 1 hour.
5. Check Doneness: Ensure the chicken is tender and cooked through. The internal temperature should reach 165°F.
6. Adjust Seasoning: Taste the stew and adjust the seasoning with more salt or pepper if necessary.
7. Serve: Remove bay leaves before serving. Ladle stew into bowls, making sure each serving includes a good mix of broth, chicken, and onion.
