Classic Cinnamon Apple Pie in Flaky Butter Crust
Ingredients
For the Apple Filling:
- 6 medium-sized apples (such as Granny Smith), peeled, cored, and thinly sliced
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice

Instructions
1. Prepare the Apple Filling:
In a large mixing bowl, combine the sliced apples, granulated sugar, cinnamon, nutmeg, and lemon juice. Toss well to ensure the apples are evenly coated. Set aside and let the flavors meld for about 15 minutes.
2. Make the Pie Crust:
In another mixing bowl, combine flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs. Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough comes together. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
3. Preheat the Oven:
Preheat your oven to 425°F (220°C).
4. Roll Out the Dough:
On a lightly floured surface, roll out one dough disc to fit a 9-inch pie dish. Gently transfer the dough to the pie dish, pressing it down to fit snugly, with any overhanging dough trimmed away.
5. Assemble the Pie:
Fill the crust with the apple mixture, mounding it slightly in the center. Roll out the second dough disc and cover the pie, sealing the edges by crimping them with your fingers or a fork. Create a few small slits on the top to vent.
6. Bake the Pie:
Place the pie on the middle oven rack and bake for 25 minutes. Lower the temperature to 375°F (190°C) and continue baking for an additional 30 to 35 minutes, or until the crust is golden brown and juices are bubbling.
7. Cool and Serve:
Remove from the oven and allow the pie to cool on a wire rack for at least 2 hours, allowing the filling to set. Serve warm or at room temperature with a scoop of vanilla ice cream or whipped cream, if desired.
