Ingredients
- 1 cup grits (stone-ground preferred)
- 2 cups water
- 2 cups milk

Instructions
1. Prepare the Base
In a medium saucepan, combine 2 cups of water and 2 cups of milk. Add 1 teaspoon of salt and bring the mixture to a gentle boil over medium heat.
2. Add the Grits
Gradually stir in 1 cup of grits, using a whisk to prevent any lumps. Lower the heat to medium-low and continue stirring until the grits begin to thicken, about 5 minutes.
3. Simmer Slowly
Cover the saucepan and reduce the heat to low. Allow the grits to simmer, stirring occasionally, for about 25 minutes, or until they are tender and creamy. This slow cooking is key to achieving a rich texture.
4. Incorporate the Butter and Cheese
Remove the saucepan from the heat. Stir in 2 tablespoons of butter until melted. Gradually add 1 cup of shredded sharp cheddar cheese, mixing until the cheese is completely melted and the mixture is smooth.
5. Adjust Seasoning and Serve
Taste the grits and adjust the seasoning if necessary. Serve the creamy cheddar grits hot, garnished with additional cheese if desired.
