Classic Creamy Polenta with Pecorino Romano and Parmesan



Ingredients



- 4 cups water
- 4 cups whole milk
- 1 tablespoon kosher salt
- 2 tablespoons unsalted butter
- 1 1/2 cups cornmeal
- 1/2 cup Pecorino Romano cheese, grated
- 1/2 cup Parmesan cheese, grated

Instructions



1. Prepare Liquid Base
In a large saucepan, combine 4 cups of water and 4 cups of whole milk. Add 1 tablespoon of kosher salt. Place the saucepan over medium-high heat and bring the mixture to a gentle simmer. This should take approximately PT8M (8 minutes).

2. Incorporate Cornmeal
Once the liquid begins to simmer, gradually sprinkle in 1 1/2 cups of cornmeal, whisking continuously to avoid any lumps. Ensure a smooth texture by consistently stirring while pouring PT5M (5 minutes).

3. Cook the Polenta
Reduce the heat to low and continue cooking, stirring frequently with a wooden spoon. Allow the polenta to thicken and become creamy. This process will require some patience, as it should simmer gently for approximately PT35M (35 minutes). If the mixture becomes too thick, you can add a bit more water, a tablespoon at a time, to maintain the desired consistency.

4. Add Flavor
Remove the saucepan from the heat and stir in 2 tablespoons of unsalted butter. Once the butter has melted and is evenly distributed, incorporate 1/2 cup of grated Pecorino Romano cheese and 1/2 cup of grated Parmesan cheese. Mix thoroughly until the cheeses are completely melted and the polenta is creamy.

5. Serve
