Classic Creamy Potato Salad with Mustard Dill Dressing



Ingredients



- 2 pounds potatoes, peeled and cubed
- 1 cup buttermilk
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons whole grain mustard
- 2 stalks celery, finely chopped
- 1 small onion, finely diced
- 1/4 cup fresh dill, chopped

Instructions



1. Prepare the Potatoes:
- Place the cubed potatoes in a large pot and cover them with water.
- Bring the water to a boil over medium-high heat on the stove.
- Reduce the heat to medium-low and simmer for about 15 minutes, or until the potatoes are tender when pierced with a fork.
- Drain the potatoes and let them cool for about 10 minutes.

2. Prepare the Dressing:
- In a large mixing bowl, combine the buttermilk, mayonnaise, Dijon mustard, and whole grain mustard.
- Whisk until the dressing is smooth and well blended.

3. Mix Salad Ingredients:
- Add the cooled potatoes to the bowl with the dressing.
- Add the chopped celery and diced onion.

4. Add Fresh Herb:
- Sprinkle the chopped fresh dill over the salad.
