Classic Fettuccine Alfredo with Sautéed Garlic Shrimp
Ingredients
For the Pasta:
- 12 oz fettuccine
- 1 tablespoon salt (for pasta water)
For the Alfredo Sauce:
- 1 cup heavy cream
- 4 tablespoons unsalted butter
- 1 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 clove garlic, minced
For the Sautéed Garlic Shrimp:
- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
1. Cook the Fettuccine:
- Fill a large pot with water and add 1 tablespoon of salt. Bring it to a boil over high heat.
- Add the fettuccine to the boiling water and cook according to package instructions, typically about 8-10 minutes, until al dente.
- Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
2. Prepare the Alfredo Sauce:
- In a large saucepan over medium heat, melt 4 tablespoons of unsalted butter.
- Add 1 clove of minced garlic and sauté for about 1 minute until fragrant.
- Pour in 1 cup of heavy cream, stirring constantly until the mixture is hot but not boiling, about 3 minutes.
- Slowly add 1 cup of grated Parmesan cheese, stirring until melted and smooth.
- Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- If the sauce is too thick, add reserved pasta water, a tablespoon at a time, until desired consistency is reached.
3. Sauté the Garlic Shrimp:
- Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a skillet over medium-high heat.
- Add 2 cloves of minced garlic and sauté for 1 minute until golden.
- Add the shrimp, season with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
- Cook the shrimp for 2-3 minutes on each side, or until pink and opaque.
4. Combine and Serve:
- Add the cooked fettuccine to the Alfredo sauce, gently tossing to coat the pasta completely.
- Divide the sauced pasta onto plates and top each serving with sautéed shrimp.
- Garnish with freshly chopped parsley and serve immediately.
