Classic Jam-Filled Linzer Cookies
Ingredients
- 2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 cup jam (such as raspberry or strawberry)
Instructions
1. Prepare Ingredients:
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper and set aside.
2. Mix Dry Ingredients:
- In a medium-sized bowl, combine 2 cups of all-purpose flour, 1/2 cup of powdered sugar, and 1 teaspoon of baking powder. Mix thoroughly.
3. Cream Butter and Sugar:
- In a large mixing bowl, beat 1 cup of softened unsalted butter until creamy. Gradually add the dry ingredient mixture and continue to blend until smooth.
4. Incorporate Wet Ingredients:
- Add 1 large egg and 1 teaspoon of vanilla extract to the butter mixture. Mix until all ingredients are fully incorporated and the dough is soft and pliable.
5. Chill the Dough:
- Divide the dough in half, shape into disks, wrap each in plastic wrap, and refrigerate for 30 minutes.
6. Roll Out and Shape:
- On a lightly floured surface, roll out one dough disk to about 1/8 inch thick. Use a cookie cutter to cut out your desired shapes. Repeat with the second dough disk, but use a smaller cutter to create windows in the centers of these cookies.
7. Bake the Cookies:
- Arrange the cookies on the prepared baking sheets, ensuring about 1 inch between each cookie. Bake in the preheated oven for about 10 minutes or until the edges are lightly golden.
8. Cool and Assemble:
- Transfer cookies to a wire rack to cool completely. Once cooled, spread a small amount of jam on the full cookies. Top with the windowed cookies, pressing gently to sandwich them together.
