Classic Oven-Baked Herbed Chicken with Roasted Vegetables
Ingredients
For the Chicken:
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 2 cloves garlic, minced
- Zest of 1 lemon
For the Roasted Vegetables:
- 2 medium carrots, peeled and cut into 1-inch pieces
- 1 large red bell pepper, cut into 1-inch pieces
- 1 large red onion, cut into wedges
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Chicken:
- In a large mixing bowl, combine olive oil, salt, pepper, rosemary, thyme, minced garlic, and lemon zest.
- Add the chicken thighs to the bowl and rub the mixture all over the chicken until well coated. Set aside to marinate while preparing the vegetables.
3. Prepare the Vegetables:
- In a separate large bowl, toss the carrots, bell pepper, and red onion with olive oil, salt, and pepper until well coated.
4. Assemble in a Baking Dish:
- Arrange the marinated chicken thighs skin-side up in a large baking dish.
- Surround the chicken with the prepared vegetables, spreading them evenly around the chicken.
5. Bake:
- Place the baking dish in the preheated oven.
- Bake for about 40-45 minutes, until the chicken is golden brown, skin is crispy, and the internal temperature reaches 165°F (74°C).
- The vegetables should be tender and slightly caramelized.
6. Serve:
- Remove from the oven and let rest for 5 minutes before serving.
- Serve the chicken with roasted vegetables on the side for a complete dish.
