Classic Ratatouille with Roasted Garlic and Herbs



Ingredients



- 2 medium eggplants, diced
- 2 medium zucchinis, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 3 large tomatoes, diced
- 1/4 cup olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil, chopped

Instructions



1. Prepare the Vegetables:
- Dice the eggplants and slice the zucchinis into half-inch thick rounds. Chop the red and yellow bell peppers, ensuring they're approximately the same size for even cooking. Finely chop the large onion and set aside.

2. Roast the Garlic:
- Preheat your oven to 400°F. Place the minced garlic on a small piece of aluminum foil. Drizzle with a small amount of olive oil and sprinkle with salt. Wrap tightly in the foil and roast for approximately 15 minutes until the garlic is fragrant and golden.

3. Sauté the Vegetables:
- In a large skillet or Dutch oven, heat 1/4 cup of olive oil over medium heat. Once the oil is shimmering, add the chopped onion and garlic. Sauté for about 5 minutes, until the onion becomes translucent.

4. Combine and Cook:
- Add the eggplant, zucchinis, bell peppers, and tomatoes to the skillet. Stir well to combine. Season with the dried thyme, dried oregano, salt, and black pepper. Allow the mixture to cook for 20 minutes, stirring occasionally, until the vegetables are tender.

5. Finish the Dish:
- Stir in the roasted garlic and cook for an additional 5 minutes. This will infuse the ratatouille with a deep, roasted flavor. Remove from heat and let sit for a few minutes before serving.

6. Garnish:
- Just before serving, sprinkle the chopped fresh basil over the ratatouille. This will add a bright, aromatic touch to the dish.
