Colorful Garden Stir-Fry with Herbaceous Chicken & Feta
Ingredients
- 1 pound chicken breast, cubed
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1/2 cup bell pepper, sliced
- 1/2 cup zucchini, sliced
- 1/2 cup mushrooms, sliced
- 1/2 cup onions, sliced
- 1/2 cup Brussels sprouts, halved
- 1/2 cup potatoes, diced
- 1/2 cup butternut squash, diced
- 1/2 cup corn kernels
- 1/2 cup beans, trimmed
- 1/2 cup artichokes, quartered
- 1 cup fresh tomatoes, chopped
- 1 cup root vegetables, diced (carrot, parsnip)
- 1 cup cucumber, sliced
- 1 cup spinach leaves
- 1 cup rice, cooked
- 1/2 cup feta cheese, crumbled
- 1 tablespoon fresh herbs (parsley, basil, or thyme)
- Salt and pepper to taste
Instructions
1. Prepare the Chicken and Vegetables:
- Cube 1 pound of chicken breast.
- Mince 2 cloves of garlic.
- Slice 1/2 cup each of bell pepper, zucchini, mushrooms, and onions.
- Halve 1/2 cup of Brussels sprouts.
- Dice 1/2 cup each of potatoes and butternut squash.
- Chop 1 cup of fresh tomatoes.
- Dice 1 cup of root vegetables (such as carrot and parsnip).
- Slice 1 cup of cucumber and trim 1/2 cup of beans.
2. Cook the Chicken:
- In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat.
- Add the cubed chicken and minced garlic, and stir-fry until the chicken is browned and cooked through, approximately 5 minutes.
3. Add Vegetables:
- Add the sliced onions and cook until translucent, about 2 minutes.
- Incorporate the broccoli, cauliflower, bell pepper, zucchini, mushrooms, Brussels sprouts, potatoes, butternut squash, corn, beans, artichokes, diced root vegetables, and fresh tomatoes.
- Stir-fry the mixture, tossing frequently, for about 8-10 minutes or until vegetables are tender-crisp.
4. Combine and Serve:
- Fold in the cooked rice, spinach leaves, and sliced cucumber, stirring gently until the spinach begins to wilt.
- Season with salt and pepper to taste.
- Sprinkle crumbled feta cheese and fresh herbs over the top before serving.
