Colorful Pickled Vegetable Medley



Ingredients



- 2 medium cucumbers, sliced
- 1 medium onion, thinly sliced
- 2 large carrots, julienned
- 2 medium beets, peeled and thinly sliced
- 2 jalapeños, sliced
- 1 cup pickle juice
- 1/2 cup orange juice
- 1 tablespoon mixed fresh herbs (such as dill, parsley, or cilantro), chopped
- 10 whole peppercorns

Instructions



1. Prepare the Vegetables:
- Slice the cucumbers, onions, carrots, beets, and jalapeños.
- Try to keep all vegetable slices uniform in thickness for even pickling.

2. Combine Juices and Spices:
- In a large pot, pour in 1 cup of pickle juice and 1/2 cup of orange juice.
- Add 10 whole peppercorns to the liquid mixture.

3. Heat the Mixture:
- Place the pot on the stove over medium heat.
- Bring the mixture to a gentle simmer (170°F-180°F) while stirring occasionally.

4. Add Fresh Herbs:
- Stir in 1 tablespoon of freshly chopped herbs.
- Allow the herb-infused mixture to simmer for 5 minutes.

5. Pickle the Vegetables:
- Carefully add the sliced vegetables to the simmering liquid in the pot.
- Ensure all vegetables are submerged in the liquid.
- Cover the pot and let it simmer on a low heat for 15 minutes.

6. Cool Down:
- After 15 minutes, turn off the heat and allow the pot to cool down at room temperature for about 20 minutes.

7. Refrigerate:
- Transfer the cool vegetable medley and liquid into airtight jars.
- Place the jars in the refrigerator, letting the flavors meld overnight for the best results.

8. Serve and Enjoy:
- Serve these bright and zesty pickled vegetables as a delicious and healthy snack or side dish.
