Comforting Chicken Noodle Soup for Lunch
Ingredients
- 8 cups chicken broth
- 2 medium onions, diced
- 3 large carrots, sliced
- 3 stalks celery, sliced
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces egg noodles
- 2 cups cooked chicken, shredded
Instructions
1. Prepare Vegetables and Herbs:
- Dice the onions, slice the carrots and celery, and mince the garlic. Chop the parsley, rosemary, and thyme.
2. Sauté Aromatics:
- In a large pot over medium heat, add a drizzle of olive oil.
- Add the onions, carrots, celery, and garlic. Sauté for approximately 5 minutes until the vegetables are softened.
3. Simmer Soup Base:
- Pour in the chicken broth. Stir in the salt, pepper, rosemary, and thyme.
