Comforting Yukon Gold Mashed Potatoes
Ingredients
- 5 lbs Yukon Gold potatoes, peeled and quartered
- 1 tablespoon Lawry’s Seasoned Salt
- 1 cup half and half
- 4 ounces cream cheese, softened
- 4 tablespoons unsalted butter
- 8 cups salted water (for boiling)
- 1/2 cup whole milk
Instructions
1. Prepare the Potatoes
Place the peeled and quartered Yukon Gold potatoes into a large pot. Add enough salted water to cover the potatoes completely.
2. Boil the Potatoes
Set the pot on the stove over high heat. Bring the water to a boil, then reduce the heat to maintain a simmer. Cook the potatoes for about 15 minutes, or until they are fork-tender.
3. Drain and Dry
Carefully drain the potatoes in a colander. Return the drained potatoes to the pot. Over low heat, let the potatoes dry out slightly by stirring them gently for about 1-2 minutes.
4. Mash the Potatoes
Remove the pot from the heat. Using a potato masher, mash the potatoes until they are smooth.
5. Season and Flavor
Add the Lawry’s Seasoned Salt, softened cream cheese, and unsalted butter to the mashed potatoes. Mix until the ingredients are well incorporated and the potatoes are creamy.
6. Incorporate Dairy
Slowly stir in the half and half and whole milk, combining thoroughly until the mixture is smooth and fluffy. Texture should be creamy but not runny.
7. Taste and Adjust
Taste and adjust seasoning if necessary. You can add more Lawry's Seasoned Salt for additional flavor as needed.
8. Serve Warm
Transfer the mashed potatoes to a serving dish. Serve immediately as a delightful side dish for dinner.
