Cranberry and Fig Compote with a Bourbon-Port Twist
Ingredients
- 4 cups fresh cranberries
- 1 cup water
- 1 cup granulated sugar
- 1/2 cup toasted nuts (such as walnuts or pecans)
- 1/2 cup raisins
- 1/2 cup chopped dried figs
- 1 tablespoon orange zest
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 2 tablespoons honey
- 1/2 cup fresh orange juice
- 1/2 cup apple cider
- 1/4 cup pomegranate juice
- 2 tablespoons orange liquor
- 2 tablespoons bourbon
- 2 tablespoons rye
- 1/4 cup port
Instructions
1. Prep the Cranberries:
- Rinse and sort cranberries. Discard any that are soft or damaged.
2. Combine the Base Ingredients:
- In a large saucepan over medium heat, combine the cranberries, water, granulated sugar, and brown sugar. Stir until sugar dissolves.
3. Simmer and Reduce:
- Increase heat to high and bring to a boil. Reduce heat to low and let the mixture simmer for about 10-15 minutes, stirring occasionally, until the cranberries begin to pop and soften.
4. Infuse with Flavor:
- Stir in the orange zest, cinnamon, and nutmeg. Let the spices bloom for 2-3 minutes.
5. Add Fruit and Nuts:
- Mix in the raisins, dried figs, and toasted nuts. Continue to simmer for another 5 minutes, allowing flavors to meld.
6. Finish with Liquids:
- Pour in the orange juice, apple cider, pomegranate juice, orange liquor, bourbon, rye, and port. Stir well to combine.
7. Sweeten Naturally:
- Drizzle the maple syrup and honey over the mixture. Stir to blend all ingredients thoroughly.
8. Final Simmer:
- Continue to simmer on low heat for another 10-15 minutes until the compote thickens to desired consistency.
9. Cool Slightly:
- Remove from heat and allow the compote to cool for at least 10 minutes before serving. It will thicken as it cools.
