Cranberry Brie Delight with Gin-Lime Glaze
Ingredients
For the Brie Dish:
- 1 round (8 oz) Brie cheese
- 1/4 cup cranberry sauce
- 1 tablespoon olive oil
- Crackers for serving
For the Gin-Lime Glaze:
- 1/4 cup gin
- 1/4 cup wine (white or rosé recommended)
- 1/4 cup broth (chicken or vegetable)
- 1 tablespoon honey
- 1 tablespoon butter
- 1 tablespoon lime juice
- A dash of bitters
- A pinch of salt
- A pinch of pepper
For the Dessert Topping:
- 1 cup vanilla ice cream
- 1/2 cup Greek yogurt
- Ice (for serving or garnish, optional)
Instructions
1. Prepare the Brie:
- Preheat a non-stick pan over medium heat. Add the olive oil and allow it to heat up for about 1-2 minutes.
- Once the oil shimmers, carefully place the Brie cheese in the pan. Let it cook for about 4-5 minutes, or until the crust starts to become golden and slightly crisp. Carefully flip the Brie using a spatula, allowing the other side to cook similarly.
2. Prepare the Gin-Lime Glaze:
- In another small pan, combine gin, wine, broth, and honey over medium heat. Stir occasionally until the honey dissolves.
- Once mixed, add the butter, lime juice, bitters, salt, and pepper. Let the glaze simmer gently for about 5 minutes, or until it reduces by half. Stir continuously to prevent the glaze from burning or sticking.
3. Assemble and Finish:
- Gather a serving platter. Place the warm, pan-fried Brie on the platter. Gently spoon over a layer of cranberry sauce.
- Drizzle the warm gin-lime glaze over the cranberry-topped Brie, ensuring it elegantly cascades down the sides.
4. Dessert Topping:
- In a small bowl, mix the vanilla ice cream and Greek yogurt until smooth. This creamy concoction serves as a delightful contrast to the rich Brie and tart cranberry.
- Serve alongside the Brie dish for those who wish to add a cool, refreshing topping to their cracker and Brie bites.
5. Serve:
- Arrange crackers around the platter for easy scooping.
- Optionally, serve with a side of ice or even a chilled gin-lime cocktail for a thematic pairing.
