Cranberry Orange Breakfast Scones with Vanilla Glaze
Ingredients
- 2 cups all-purpose flour
- 1/4 cup white granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and diced
- 1 cup chopped fresh cranberries
- 1 tablespoon orange zest
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
For the Vanilla Glaze:
- 1 cup powdered sugar
- 1 1/2 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
2. Prepare the Dry Ingredients: In a large mixing bowl, combine 2 cups of all-purpose flour, 1/4 cup of white granulated sugar, 1 tablespoon of baking powder, 1/4 teaspoon of baking soda, and 1/2 teaspoon of salt. Whisk together until evenly mixed.
3. Incorporate the Butter: Add the 1/2 cup of chilled, diced unsalted butter to the flour mixture. Use a pastry cutter or your fingers to blend the butter until the mixture resembles coarse crumbs.
4. Mix in Fruits and Zest: Gently fold in the 1 cup of chopped fresh cranberries and 1 tablespoon of orange zest.
5. Add Wet Ingredients: In a small bowl, whisk together the 1/2 cup of buttermilk and 1 teaspoon of vanilla extract. Pour this mixture into the dry ingredients.
6. Form the Dough: Stir until the dough begins to come together. Turn it out onto a lightly floured surface and gently knead just until it holds together. Be careful not to overwork the dough.
7. Shape the Scones: Pat the dough into a round about 1-inch thick. Use a sharp knife to cut it into 8 wedges. Transfer the wedges to the prepared baking sheet, spacing them about 2 inches apart.
8. Bake: Bake in the preheated oven for approximately 18-20 minutes, or until the scones are golden brown. Remove from the oven and allow to cool slightly on a wire rack.
9. Prepare the Glaze: In a small bowl, whisk together 1 cup of powdered sugar, 1 1/2 tablespoons of milk, and 1/2 teaspoon of vanilla extract until smooth.
10. Glaze the Scones: Once the scones have cooled slightly, drizzle the vanilla glaze generously over the top. Serve warm for the best experience.
