Creamy Garlic Parmesan Risotto with Sautéed Mushrooms
Ingredients
Main Components:
- 1 1/2 cups Arborio rice
- 4 cups chicken broth
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1/2 cup finely chopped onion
- 3 cloves garlic, minced
- 1 cup freshly grated Parmesan cheese

For the Sautéed Mushrooms:
- 8 oz cremini mushrooms, sliced
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 clove garlic, minced
- Salt and freshly ground black pepper, to taste
Garnish:
- Freshly chopped parsley (optional)
- Additional grated Parmesan cheese (optional)
Instructions
1. Prepare the Chicken Broth:
- In a medium saucepan, warm the chicken broth over low heat. Keep it warm but not simmering throughout the cooking process.
2. Cook the Mushrooms:
- Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the sliced mushrooms, season with salt and pepper, and sautée until golden brown, about 5 minutes.
- Stir in 1 clove of minced garlic and thyme. Cook for another 2 minutes until fragrant. Remove the skillet from the heat and set aside.
3. Start the Risotto:
- In a large, heavy-bottomed saucepan, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat.
- Add the chopped onions and 3 cloves of minced garlic, cooking until the onions are soft and translucent, about 5 minutes.
4. Toast the Rice:
- Stir in the Arborio rice, coating it thoroughly with the butter and oil mixture. Cook for 1-2 minutes until the edges of the rice are translucent.
5. Add Wine and Begin Adding Broth:
- Pour in the white wine, stirring constantly until it is fully absorbed by the rice.
- Gradually add the warm chicken broth, one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next, maintaining a gentle simmer. This process should take about 18-20 minutes until the risotto is creamy and the rice is al dente.
6. Finish the Risotto:
- Once the rice reaches the desired texture, add the grated Parmesan cheese and stir to combine. Season with salt and pepper to taste.
7. Combine and Serve:
- Fold the sautéed mushrooms into the risotto.
- Serve immediately, garnished with additional Parmesan cheese and fresh parsley if desired.
