Creamy Horseradish & Garlic Mashed Potatoes
Ingredients
- 3 pounds of potatoes, peeled and quartered
- 4 tablespoons unsalted butter
- 1 cup heavy cream
- 2 tablespoons prepared horseradish
- 3 cloves garlic, minced
- 4 ounces cream cheese, softened
- 1 teaspoon kosher salt
- 2 teaspoons flaky salt, for garnish
- ½ cup sour cream
- 1 tablespoon white vinegar
Instructions
1. Prepare the Potatoes
- Place the peeled and quartered potatoes in a large pot. Cover them with cold water and add a pinch of kosher salt.
2. Boil the Potatoes
- Bring the water to a boil over medium-high heat. Cook the potatoes for about 20 minutes, or until they are fork-tender.
3. Melt the Butter and Infuse Flavor
- While the potatoes are boiling, in a small saucepan over low heat, melt the butter. Add the minced garlic and cook for about 1 minute until fragrant but not browned.
4. Warm the Cream and Horseradish
- Stir in the heavy cream, prepared horseradish, and white vinegar with the butter and garlic mixture. Heat through, but do not allow it to boil. Set aside.
5. Mash the Potatoes
- Drain the boiled potatoes and return them to the pot. Mash them using a potato masher for a chunkier consistency or a ricer for a smoother texture.
6. Combine and Mix
- Add the cream cheese, sour cream, and infused butter-cream mixture to the mashed potatoes. Stir gently until all ingredients are incorporated and the mixture is smooth.
7. Season and Serve
- Stir in the kosher salt, adjusting to taste. Transfer to a serving bowl and sprinkle with flaky salt for texture. Serve hot and enjoy!
