Creamy Lemon Ricotta Pasta with Almonds and Basil



Ingredients



- 12 ounces Pasta (your choice of shape)
- 2 Lemons (juice and zest)
- 1 cup Ricotta cheese
- 2 cloves Garlic, minced
- 1/2 cup Parmesan cheese, grated
- 1/3 cup Almonds, toasted and chopped
- 2 tablespoons Olive oil
- 1 teaspoon Pink peppercorns, crushed
- 1/4 cup Fresh basil leaves, torn
- 1 Lemon, thinly sliced, for garnish
- Salt and pepper to taste

Instructions



1. Prepare the Ingredients
Start by zesting the lemons and then juice them into a bowl, ensuring no seeds are present. Mince the garlic and set aside. Toast the almonds in a dry skillet over medium heat for about 3-5 minutes or until golden and fragrant. Chop the almonds coarsely after cooling.

2. Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about PT10M (10 minutes). Reserve 1 cup of the pasta cooking water and then drain the pasta.

3. Make the Sauce
In a large skillet over medium heat, add the olive oil and minced garlic. Sauté for about PT1M (1 minute) until fragrant. Lower the heat and add the ricotta cheese, lemon juice, and zest. Stir to combine.

4. Combine Pasta and Sauce
Add the cooked pasta to the skillet with the ricotta mixture. Toss to coat, using the reserved pasta water as needed to reach the desired creamy consistency. Stir in the Parmesan cheese and season with salt and crushed pink peppercorns.

5. Finishing Touches
Remove the skillet from the heat and fold in the toasted almonds and torn basil leaves. Taste and adjust seasoning if necessary.

6. Serve
Serve the pasta hot, garnished with thin lemon slices and an extra sprinkle of Parmesan and basil if desired.
