Creamy Pasta Primavera with Herbed Boursin and Parmesan



Ingredients


- 8 oz pasta (your choice)
- 5 oz Boursin cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup frozen peas, thawed
- 2 cups fresh spinach leaves
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 1 cup cherry tomatoes, halved
- 1/4 cup sun-dried tomatoes, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped

Instructions


1. Boil Pasta:
- Fill a large pot with water and add a pinch of salt. Bring to a boil over high heat.
- Add the pasta and cook according to package instructions until al dente, about PT10M (10 minutes).
- Drain the pasta, reserving 1 cup of pasta water. Set aside.

2. Prepare Vegetables:
- In a large skillet, add a tablespoon of olive oil over medium heat.
- Add asparagus and cook for PT3M (3 minutes) until they start to soften.
- Add the cherry tomatoes, sun-dried tomatoes, and peas to the skillet. Cook for an additional PT4M (4 minutes), stirring occasionally.

3. Wilt the Spinach:
- Add the spinach to the skillet and cook until just wilted, about PT2M (2 minutes).

4. Combine Cheese and Pasta:
- Lower the heat slightly and add Boursin cheese to the skillet. Stir until it melts and is well combined with the vegetables.
- Add the cooked pasta to the skillet, tossing gently to coat with cheese and incorporate veggies.
- Gradually add the reserved pasta water, a little at a time, until the sauce reaches your desired creamy consistency.

5. Finalize the Dish:
- Stir in the grated Parmesan cheese, salt, and black pepper. Mix well.
- Remove from heat and sprinkle with chopped parsley and basil.

6. Serve and Enjoy:
- Divide the pasta among plates and serve warm.
